BOULANGEUSE EXTRAORDINAIRE

Again, I triumph in the kitchen.

I coaxed wild yeast and bacteria out of thin air, gave them a safe and happy place to bubble and ferment; lo and behold, we have chef levain pain de campagne.

Flour, water, salt and the secret ingredient - time, about a week. You can't make really excellent bread in a single afternoon. You can make something puffy and hot to put butter on, but for bakers pushing their skill and patience limits, that just won't do.

Even the book, "Baking with Julia," says this method may not succeed. The more you bake, the more likely it is you'll have the proper ingredients in the air of your kitchen. Sure enough, not even 12 hours after I set the chef out to ferment, I had it. Now the dough is on the second-to-last of its 6 rises, and is guaranteed to make a boule worthy of tomorrow night's dinner (more Fronch food), bouef bourguignon with old pinot noir instead of burgundy. Mish mish. I'm not the oenophile. I will have chocolate soy milk to drink with mine. Chocolate milk goes with everything.

This comes on the heels of another baking masterpiece - another batch of potato bread, left to turn sourdoughish overnight. Recall how Josh kind of almost falls down when he tastes something overwhelmingly good, (like the Lindor choclate and fresh raspberries)? Yeah. He did it again. Morgan demanded that she be allowed to have the heels of the second loaf. Huh? A kid asking for crusts? It must be good.

Maybe I need to get tougher critics.

I am inordinately proud of this. Well...maybe not inordinately. Baking is a skill, just like anything else. I seem to have a knack for it.

Dr. Atkins and you low-carb fools, kiss my happy ass. Bread is the staff of life, yo, and I'm approaching artisan status.
